Leftover Paella

I originally made it because I had to get rid of some cauliflower and was surprised when my flatmate said she'd loved it.

You need a pan and some oil, then fry some onions if you want to. The rest is really - basically just throwing in stuff. For example:

Cauliflower (but it has to be cooked, for me it was just left over from another day). You have to cut the cauliflower to pretty small pieces.
Sweetcorn (also took that cos it was left over)
Red Pepper (cut to small pieces too)
Tomatoes (same - small pieces)
Sundried Eggplant (small...)
Rice (one cup for 2 persons should do the trick), cooked.

These were my basics, but you might as well throw in kidney beans, brocoli and all kinds of stuff. Then you wait until it is all one lovely hot mass, and I'd suggest to put salt, pepper, chili powder, curry powder and ... anything else you have on it. Feel free!

This tastes fantastic with orange juice and sparkling water.

Enjoy!
