Whitebait Fritters with Fennel and Avocado Salad

Serves 4

Note: I have used John Dory fillets (cut into chunks) instead of whitebait, and it tasted better. Any fish would be fine, I think.

Ingredients:
1 cup self raising flour
1 cup milk
1 egg
juice of half a lemon
a pinch of nutmeg
salt and pepper to taste
250g (9oz) whitebait
olive oil

Ingredients for the salad:
2 avocados, peeled and sliced
1 fennel bulb, trimmed and thinly sliced
olive oil
balsamic vinegar

1. Sift flour into a large bowl. Make a well in the centre of the flour. Gradually whisk in combined milk and eggs until batter is smooth.

2. Blend in juice, nutmeg and seasonings. Allow batter to stand for 15 minutes. Stir in whitebait.

3. Add enough oil to a frying pan to cover the base. Heat over a medium heat. Add heaped spoonfuls of the fritter mixture to the hot oil. Cook for 2-3 minutes on each side, or until fritters are golden and cooked through.

4. Drain on crumpled kitchen paper. Keep warm. Continue with remaining batter, adding more oil as required. Serve with lemon wedges and salad.

5. To make the salad, combine the avocado and fennel in a serving bowl. Drizzle with oil and balsamic vinegar.

Avocado Salad

This is the tastiest salad ever! Serves 6.

Ingredients:
3 avocados
3 lebanese cucumbers
3/4 cup mint leaves
100g (4oz) baby spinach leaves
500g (1lb) yellow grape tomatoes, halved

Ingredients for the dressing:
2 tbsp lime juice
1/3 cup olive oil
1 clove garlic, crushed
1/2 tsp caster sugar
sea salt and cracked black pepper

To make dressing, whisk lime juice, oil, garlic, sugar, salt and pepper until the sugar is dissolved.

Slice the avocados and place with cucumber, mint, baby spinach and tomatoes on a large plate. Drizzle with dressing

Mini Tomato and Cheese Quiches

Serves 24

Ingredients:
Oil, for greasing
3 sheets ready rolled puff pastry, partially thawed
375g (13oz) small cherry tomatoes
1 1/4 cups tasty cheese, grated
1/4 cup chives, chopped
3 eggs at room temperature
2/3 cup milk
salt and pepper to taste

1. Lightly grease two 12 hole (2 tbsp) tartlet panss with oil. Cut eight 7.5cm (3") rounds from each sheet of pastry and press into prepared pans.

2. Place 2 cherry tomato halves into the base of each tart. Sprinkle with cheese and chives. Use a fork to whisk the eggs, milk, salt and pepper together until well combined. Carefully pour the egg mixture into each tartlet case.

3. Bake in a hot oven (200C, 390F) for 20 minutes or until golden and puffed. Remove from oven and stand in pan for 5 minutes before serving.

You could also use mushrooms, ham, capsicum, olives etc in this recipe.

Hazelnut and Chocolate Chip Cookies

Makes 18.

Ingredients:
125g (4 1/2oz) butter, chopped
1 1/2 cups self raising flour
3/4 cup brown sugar
1 egg
1tsp vanilla extract
3/4 cup chopped hazelnuts
2/3 cups milk chocolate chunks (I usually use 1/3 cup of white chocolate and 1/3 cup dark chocolate)

1. Preheat oven to 180C (350F). Melt butter in a saucepan over low heat and then set aside to cool slightly.

2. PLace flour and sugar in a bowl and mix to combine. Add butter, egg and vanilla and mix to combine. Stir through hazelnuts and chocolate.

3. Using your hands, mould 2 tbsp of cookie mixture into a flat round. Place on a baking tray lined with non-stick baking paper. Repeat with remaining mixture. Bake for 10-12 minutes or until golder. Allow to cool on trays.
